Unpasteurized sake from Hananomai. It gives bold taste and notes of koji. Light taste, but complex. This sake also known as Mai Sake.


Pale straw color with a little note toasted rice and meat. Lactic Acid dominated flavor of this sake, with rich and a little sweetness. light to medium taste either the beginning or the end. Nose is sweet and floral. You may note other taste like kiwi and melon. Bitterness on the front, refreshing. Some people will give opinion that this sake contains high alcohol flavor, a little burn in the tall.

The best temperature

Cold and straight. It might be enjoyable with rock of ice.

Food pairing

Heavy flavor food. Foei Grass, Tuna belly, yakitori, steak, sea urchin, fishy shellfish, meats.

Either short sake glass for straight or on the rock. If you want to enjoy the aroma, pinot noir or burgundy glass is also good enough. Masu box is also good to enjoy this sake.
