Meaning: Moon on the water

Miho Imada, one of female sake masters must be proud of her sake. This sake is not bad at all. One of "must try" sake. Fukucho sake has unusual way to process the rice; skipped the charcoal filtering, so the sake has strong aromatic smell. She is also combining between two rice to create this sake. It attributes of femininity and softness. Overall, this sake is might be one of the modern sake.


Extremely floral and soft nose. Fruity, lime, fennel, a hint of white pepper. Some people agree that there are sandlewood and melon. Almond, pepper and clove flavors may appear after. It will ended with milk-chocolate hint finish. However, other people also agree with ripe cantaloupe and black licorice as the finish. Soft edged fullness overall. Rich and definitely complex taste.

The best temperature

Cold or chilled.

Food pairing

Teppan yaki. Hot (temperature) food with not too saucy. Even this sake is a little fruity, it is not the best to pair with dessert. Good for yakitori or teriyaki. Some sweet chinese food. Avoid Italian food, but might be work with "little sweet" taste French food. Light BBQ also work.

About the brewer

Family owner: Imada Shuzo. Founded 1868. Miho Imada, Fukucho owner and toji (master brewer), is one of the few female tojis in Japan.

Perfect Glass

Pinot Noir or Burgundy sake glass is perfect. Cold sake glass is acceptable.
